Let�s Talk Hanukkah (or Chanukah) & Giveaway!

Hanukkah is known as the festival of lights, it�s a holiday celebrated for eight nights, and like so many other holidays, it celebrates the perseverance of the Jewish people in the face of adversity. The reason the holiday is for eight nights, is because oil for an oil lamp for use in the temple that was supposed to last only one day, lasted a full eight days. Miraculously this was the time needed to replenish the supply. In truth, it's a holiday that gets very little attention.

Christmas is a big deal holiday. Hanukkah however takes on inflated importance because of its proximity to Christmas. This year it will be celebrated from December 16 through December 24th. But other than spinning a top called a dreidl, lighting candles to commemorate the miracle and eating potato pancakes or latkes which are fried in oil, there�s not much more to it. When it comes to food, there are no advent calendars filled with toys or chocolate, just cheap chocolate coins. There is no buche de Noel, no fancy holiday cookies, no gingerbread houses. In Israel they celebrate by eating jelly donuts called sufganiyot, but I've never seen them let alone tasted them.

While some gourmet retailers have put together gift baskets, I�ve never found any I thought were very good. Most of them are actually pretty pathetic, they often include items from other Jewish holidays, as if no one would notice. Traditional Purim cookies called Hamantaschen in a Hanukkah basket? It�s the equivalent of offering up chocolate Easter eggs for Christmas. No bueno.

But thanks to Manischewitz there is a Chanukah House! For kids this is a fun way to celebrate and get in the holiday spirit. There is chile and then there�s chili. Chiles are sometimes called peppers, but that�s not really accurate. Pepper comes from peppercorns. Confusing things even further there is chili which is short for chili powder, made from powdered chilis and chili short for chili con carne, a stew made with fresh chilies or chile powder. Lamb Meatballs Recipe

Nothing is more disappointing than a soggy french fry. There are lots of things I don�t just like crispy but extra crispy. Toast, onion rings, pizza crust, potato chips, breaded cutlets, pie crust, streusel. I could go on and on. And is there anything better than the crispy edges of a roast? I�m the one who wants a rare slice from the middle and a crusty slice from the end of the roast�beef, pork or lamb. There are lots of ingredients for making food crispy and many of them contain gluten, and one of them is naturally gluten free, cream of rice. Cream of rice is finely ground rice that cooks very quickly. It can be used as a hot cereal but also in recipes like this one for baked rice custard that I plan on experimenting with shortly. When used in meatballs it absorbs moisture but also helps to create a lovely crisp texture to the surface of the meatballs. Bison Rib Roast

For a big celebratory meal, a rib roast is very impressive, especially with the bones in. While beef might be a common choice, bison is also available in a rib roast. I�ve shared my experience cooking several different cuts of bison and how much I enjoy it. I like the texture and flavor but also really appreciate how environmentally sustainable and how healthy it is, particularly when compared to beef. It's lighter and less fatty so I find I'm able to enjoy it more. When Durham Ranch offered me the opportunity to try one of their products I decided to go with a rib roast. Durham Bison Ranch is one of largest bison operations in the US, with a 55,000 acre ranch in Eastern Wyoming with around 3,000 bison. Unlike some producers, the bison from Durham is not completely 100% pasture raised. It�s finished on a feed lot where it is fed mostly grass based silage and very little grain, since it is not part of their natural diet. Why are their animals finished this way? Drought condition
